Fail-safe granola
Melt coconut oil (1/2 cup) with maple syrup (1/2 cup) and vanilla essence (1 tsp). In a large bowl, mix organic rolled oats (4 cups) with your favourite nuts and / or seeds (1.5 cups), ground cinnamon (1/2 tsp) and salt (3/4 tsp). Don't just tip the wet ingredients over the dry in the baking tray - they need to be fully coated. Lay out on baking tray in single layer and bake at 180 degreed C (fan assisted) for around 24 minutes until lightly golden. Stir halfway and keep an eye to make sure it doesn't burn.
Leave to entirely cool and don't touch it during that time! Then add other ingredients as desired - I like raisins, dried apricots or dried cranberries, goji berries and coconut chips. Dark chocolate chips add a decadent twist!
Store in an airtight container for up to two weeks.
